Piri Piri Chicken Burger

Burger Buns | 4 |
Chicken Breasts | 600g |
Avocado (smashed & seasoned with salt) | 1 |
Tomato (slices) | 200g |
Spanish Onion (thinly sliced) | 80g |
Swiss Cheese | 100g |
Lettuce (washed, picked) | 80g |
Cole & Mason Piri Piri Seasoning Blend | 4 tsp |
Vegetable Oil | 50 ml |

Mayonnaise | 160g |
Cole & Mason Piri Piri Seasoning Blend | 3 tsp |
Lemon (juice) | 30ml / 40ml |
Method:
1. Make Piri Piri mayonnaise by combining mayonnaise, Piri Piri spice and lemon juice. Mix well until fully combined and adjust seasoning at the end if needed.
2. Make smashed avocado by deseeding the avocado, placing the flesh into a mixing bowl. Seasoning with a good pinch of salt and 30ml of lemon juice, smash well using a fork
3. Slice the chicken breast in half flat ways and coat with Piri Piri spice, then sear in a moderately hot pan, until golden brown and cooked through, remove from the heat
4. Place the Swiss cheese on top of the chicken breast to melt slightly.
5. Toast burger buns.
6. Assembling the burger - Bottom bun, chicken breast with cheese, lettuce, tomato, smashed avocado, Spanish onion, Piri Piri mayo and finish with top bun. Serve with your favourite side.
Hints & Tips:
Only apply sauce to the top bun, as this will help whilst eating to maintain structural integrity of the burger.
